Mango Salsa

Ingredients

  • 2 large mangos peeled and cubed

  • Half a red onion finely chopped

  • 1 red chilli de-seeded and finely chopped (optional)

  • 4 tablespoons of coriander leaves, chopped

  • Juice of 1 lime


We have been receiving mangos in some of the veg bags over the last couple of weeks, which is a real treat. We made this salsa to go with a Caribbean curry which went out to some of our families as part of our free cooked meal delivery service. The salsa is delicious on its own but also works well with Asian or Caribbean style curries.


Method

  1. Combine all the ingredients in a large bowl and chill in the fridge for an hour before serving.
