Carrot Cake Energy Balls

Ingredients
Half a cup of oats
Half a cup of desiccated coconut (plus extra for rolling) – you can also sub with more oats or ground almonds.
1 large grated carrot
1 small apple, cored and grated (no need to peel)
2/3 a cup of pitted dried dates, soaked in hot water for at least 20 minutes
Half a teaspoon of ground cinnamon
We made these as a healthy dessert for our Brockwell Greenhouses sessions using the ingredients we had available in our Healthy Living Kitchen – we had apples and carrots and not much time, and the inspiration for carrot cake balls was born. They are super easy if you have a food processor or hand blender. Use the same cup to measure all your ingredients. You could also try switching the carrots and apples for other fruit such as berries. Makes about 25 balls.
Method
Drain your pre-soaked dates.
Measure out all your ingredients using the same mug or cup.
Blend all your ingredients together in a food processor or a large bowl with a hand blender. Alternatively you can knead the mixture by hand but the results won’t be as smooth. If the mixture is too wet add some more oats or coconut. If it is too dry add a little water or teaspoon extra of oil.
Pour a handful of dessicated coconut onto a plate.
Take half a tablespoon of the mixture and form into small balls with your hand. Roll the balls in the coconut and place in the fridge for at least 20 minute
