1 scotch bonnet pepper, sliced
1 tablespoon Black pepper
A pinch of Salt (or to taste)
1 tablespoon Curry Powder
1 teaspoon Red chilli powder
1 tablespoon Turmeric powder
2 tablespoons Soya Sauce
This recipe was made by Rosie, a regular Pantry Customer who demonstrated how the ingredients bought can be used to make a delicious and nutrition meal.
She says “This cheap and affordable meal will serve a family of 4 at an extremely low cost taken from a small portion of my £5.00 weekly shop.”
“All ingredients were purchased from the Healthy Living Platform pantry. I was able to purchase 10 fresh fruit and vegetables, together with 10 cupboard, dried or freezer items, all for £5.00.”
Rosie served her curry with rice, however you can use whatever is available to you like naans, parathas, crusty bread etc
Method:
1. Using a large frying pan or Dutch pot, use a small amount of oil to base your pan. Bring to the heat, pour in your chopped tomatoes, onions, and garlic
2. Add in the black pepper, curry powder, chilli powder, turmeric powder and salt. Mix together and cook.
3. Add Soya sauce and drained chickpeas and mix together. Then add in the scotch bonnet and chunks of sweet potatoes and yam. Mix together and leaver to simmer for 10 minutes, or until the chunks are cooked through.
4. When cooked, serve up with rice, naan or whatever you wish!
