Spinach Lasagne

Ingredients

  • 2 tbsp olive oil

  • 1 clove garlic, minced

  • 6 medium carrots- peeled and diced

  • 2  onions, chopped

  • 1 (400g) tin of chopped tomatoes

  • 1 tbsp mixed spice

  • 1 cube vegetable stock

  • 600g frozen spinach

  • 3 tbsp butter

  • 3 tbsp plain flour

  • 700ml milk

  • 1 tsp salt 

  • 1 packet of fresh egg lasagne sheets

  • some grated cheddar cheese 


Adelaide recently completed her training to become a Food Ambassador with us. She shares a tried and trusted recipe for spinach lasagne. 

Adelaide says: “My New Year’s resolution for 2020 was to look after my health and wellbeing. So when I applied for the Food Ambassadors Training I was really inspired to make healthier choices when it comes to cooking. I have gained a lot of knowledge in cooking healthier meals, such as vegetable based dishes. It’s really helped to encourage myself and my 3 boys to eat more vegetables.”

“I am originally from Angola, which is on the West Coast of Southern Africa. Vegetables are usually side dishes that are accompanied by meat or fish, rather than main meals. With the knowledge and the experience gained through my Food Ambassador Training, I am slowly adapting my eating habits in order to incorporate more vegetables.”

‘My kids are quite fussy when it comes to eating vegetables, so one of the ways I encourage them to eat more vegetables is by cooking something that they love, and lasagne is one of their favourite meals, which I find very quick and easy to make.”


Method

  1. Preheat the oven to  gas mark 5.

  2. Heat the oil in a saucepan, then add the garlic, carrot, onion; sauté for 4-5 mins.

  3. Next, add the tomatoes and vegetable stock. Allow to boil, reduce the heat to simmer, cover and cook for 30 minutes.

  4. Add in the spinach and cook for a further 10 mins. Then turn off the heat.

  5. In a separate pan melt the butter and whisk in the flour, cook for 2 minutes, then whisk in the milk until smooth. Season with salt and pepper and simmer for 5 minutes. Then turn off the heat. 

  6. In a baking dish, layer the lasagne sheets, white sauce, and the spinach mixture.

  7. Finish by covering the top layer with the remaining sauce, and grated cheddar cheese

  8. Bake for 30 mins, or until the top is golden brown.
