Mediterranean Chickpea Salad

Ingredients
Chickpeas, 2 cans, drained and rinsed
Coriander, small bunch, washed, roughly chopped
Fresh mint, small bunch, washed, roughly chopped
2 cucumbers, cut into quarters
2 carrots, peeled, cut into round slices
1 red onion, thinly chopped
1 pack of cherry tomatoes
1 large red bell pepper, chopped
1 large yellow bell pepper, chopped
1 small tin green olives
1 whole garlic, thinly chopped
Dressing:
2 tbsp olive oil
Salt, to taste
Black pepper, a pinch or to taste
1 lemon, juiced
1 tbsp honey
1 tbsp white vinegar
This delicious recipe was made by Salman at a celebration to celebrate the Food Ambassador class of June 2023. As it was originally made for a large group of people, it can be modified to be made for smaller servings. This salad can be made a day ahead and kept in the fridge.
Method:
Mix all the vegetables together, give it a mix with chickpeas.
Make the dressing.
Add the dressing and to the rest of the salad mix it well so that the chickpeas and vegetables absorb it well.
