Mediterranean Chickpea Salad

Ingredients

  • Chickpeas, 2 cans, drained and rinsed

  • Coriander, small bunch, washed, roughly chopped

  • Fresh mint, small bunch, washed, roughly chopped

  • 2 cucumbers, cut into quarters

  • 2 carrots, peeled, cut into round slices

  • 1 red onion, thinly chopped

  • 1 pack of cherry tomatoes

  • 1 large red bell pepper, chopped

  • 1 large yellow bell pepper, chopped

  • 1 small tin green olives

  • 1 whole garlic, thinly chopped

    Dressing:

  • 2 tbsp olive oil

  • Salt, to taste

  • Black pepper, a pinch or to taste

  • 1 lemon, juiced

  • 1 tbsp honey

  • 1 tbsp white vinegar


This delicious recipe was made by Salman at a celebration to celebrate the Food Ambassador class of June 2023. As it was originally made for a large group of people, it can be modified to be made for smaller servings. This salad can be made a day ahead and kept in the fridge.


Method:

  1. Mix all the vegetables together, give it a mix with chickpeas.

  2. Make the dressing.

  3. Add the dressing and to the rest of the salad mix it well so that the chickpeas and vegetables absorb it well.
