Sweetcorn, Black Bean and Avocado Salad

Ingredients

  • 1 x 400g tin black beans, drained and rinsed

  • 250g fresh sweetcorn, cooked (tinned, fresh or frozen)

  • 1 avocado, chopped

  • 1 red chilli, chopped, optional

  • 1 onion, chopped

  • 1 lime, juiced

  • fresh coriander, chopped


This delicious sweetcorn, black bean and avocado salad is inspired by Brazilian ingredients and flavours. A delicious side or healthy lunch. We hope that this zingy, fresh-tasting salad will encourage you to try it.


Method

  1. Place the beans, sweetcorn, avocado, chilli, onion and lime juice in a large bowl and mix well.

  2. Sprinkle with freshly chopped coriander.
